Each year, I endeavor to consume one pumpkin thing per day for the month of October. This is my 7th annual Pumpkin Challenge – welcome!

Day 6: Pumpkin Chocolate, Lindor
Arriving late off a flight, I was not sure what my pumpkin item would turn out to be, but I was pleasantly surprised to be presented with pumpkin chocolate spheres upon my arrival! I didn’t find the pumpkin spice flavour to be very prominent in the chocolate, but the mild flavour paired well with it nonetheless.

Day 7: Mini Crustless Pumpkin Pies, Chocolate-Covered Katie
These are a favourite of mine to make every year! Sometimes I do the full pie and sometimes I do mini ones, and they always taste great. For these ones I remembered to add the sweetener, so THEY tasted good. The next day’s were saved by coconut whipped cream and icing sugar… TRY THEM!

Day 8: Mini Pumpkin Pies, Chocolate-Covered Katie
Like I said above – these beauties needed some supplements to save their sweetness, but they still turned out well once I did! Same recipe as yesterday sans sweetener.

Day 9: Pumpkin Flax Granola, Nature’s Path
Simple and delicious, I love turning to Nature’s Path each year for their pumpkin goodies. While I am still searching for my oft-out-of-stock favourite, this pumpkin flax granola is one of my easy go-tos for a snack! While not overtly pumpkin-y, its flavour is quite nice and flax is good for digestion, so who doesn’t like that?

Day 10: Pumpkin Banana Bread Muffins, Chocolate-Covered Katie
I think Chocolate-Covered Katie appreciates pumpkin as much as this Katie does. This recipe has always yielded a good result for me, but I think I dropped the ball when I decided not to use oil and instead used milk (an option in the recipe) and then put them in sticky (read: cheap) muffin cups. They tasted great but stuck to the paper! I will probably try again but keep the recipe in loaf form.
