Pumpkin Challenge 2017: Days 21 – 25

Each year, I endeavor to consume one pumpkin thing per day for the month of October. This is my 7th annual Pumpkin Challenge – welcome!

Day 21: Pumpkin Spice Chai, Starbucks

You can still try this seasonal treat! While it may scream “autumn,” this can add some visual and physical warmth throughout the winter as well. I opted for a half-sweet, almond-milk version and enjoyed the combined pumpkin and chai flavours!

Day 22: Pumpkin Pasta Sauce, H.H.

Thank-you, H.H., for this pumpkin pasta sauce recipe! I don’t often take the time to make things on the stove that take longer than 5 minutes to cook… This was worth it! I added spinach for some greens and it worked out quite deliciously.

Day 23: Pumpkin Pie Smoothie, Booster Juice

I wouldn’t have suspected that B.J. would be a part of my pumpkin adventures, but they appeared in my newsfeed promoting a Pumpkin Pie Smoothie, and I went to try it out right away! I replaced the dairy ingredients with almond milk and extra… Fruit? Ice? I think the almond milk, being a thinner milk, let the spices come through and it was a little overwhelmingly nutmeg-gy, but it tasted pretty good otherwise, and had lots of protein!

Day 24: Pumpkin Spice Waffles, Nature’s Path

I always look forward to this part of the Pumpkin Challenge! Nature’s Path makes a mean waffle, and these pumpkin spice ones are delicious and full of nutrients. I topped them with Coco Whip! and chocolate chips with a side of veggie bacon.

Day 25: Pumpkin Cream Cheese Banana BreadChocolate-Covered Katie

This recipe was a fun experiment! I’ve made CCK’s pumpkin banana bread before, but this time I added Daiya cream cheese to the center! I had to cut it into slices and bake them again on a baking sheet to cook them all the way through, but the texture ended up being thick and “edge pieces” on the outside and gooey and sweet/savoury on the inside!
