    Pumpkin Challenge 2018: Week 2

A special month-long edition of #KTTeats: The Pumpkin Challenge is an annual tradition where I embark on a month-long journey of daily pumpkin consumption.

Join me for my 8th annual challenge and the new treats that go along with it!

It’s been a great October so far for many reasons, but many include pumpkin. It was especially nice to get to enjoy so many pumpkin items with my west coast comrades over the last week and a half and to indulge in Vancouver’s pumpkin offerings.

I’ve just returned to Toronto and am getting ready to dig into more of its seasonal goodies for my second October in the city! In the meantime, take a look at what I tasted over the last week below.

Day 8: Pumpkin Pie Blondie (Shockingly Healthy!)

I’ve enjoyed Shockingly Healthy! products a couple of times before, but this pumpkin pie blondie was definitely my favourite.

    24 Days of Tea: 13 – 18

Last year, my mom and I shared DAVIDsTEA’s 24 Days of Tea journey together. This year, my mom is too far away to share the same tin each day with me, so I had to go it alone this time around!

Day 13: Organic Cinnamon Rooibos Chai
    Rooibos

This chunk of the advent calendar really relaxed on the caffeine! I also (obviously) relaxed on my steady hand for photos, as you may notice.

Day 13 was oh-so good! I already am openly and deeply fond of rooibos teas, and chai and cinnamon are so good on their own – to combine all three of these things? It was beautiful. I like having a caffeine-free chai option for the evenings, as it is a very warm and relaxing flavour, and I think cinnamon might be good for the soul, so adding some sugar and milk or even making a tea latte out of this would be sublime.

    Day 7: Organic Saigon Chai
    Black tea

This chai was full of spicy goodness and certainly affirmed my belief that it is hard to go wrong with chai. I like to sweeten and milk my chais up (I am known to like my chai lattes quite a bit), and this one with a bit of sweetness kept its spices and flavours and they all blended together with a bit of (cashew) milky goodness.

    Pumpkin Challenge 2017: Days 21 – 25

Each year, I endeavor to consume one pumpkin thing per day for the month of October. This is my 7th annual Pumpkin Challenge – welcome!

Day 21: Pumpkin Spice Chai, Starbucks

    DSC_0707

You can still try this seasonal treat! While it may scream “autumn,” this can add some visual and physical warmth throughout the winter as well. I opted for a half-sweet, almond-milk version and enjoyed the combined pumpkin and chai flavours!

Day 22: Pumpkin Pasta Sauce, H.H.

    DSC_0708

Thank-you, H.H., for this pumpkin pasta sauce recipe! I don’t often take the time to make things on the stove that take longer than 5 minutes to cook… This was worth it! I added spinach for some greens and it worked out quite deliciously.

  • Munich, Frankfurt, Home

    Munich, Frankfurt, Home

Finally – it is time to go home! My last stretch of airports is upon me as I fly from Warsaw to Munich. My flight in Warsaw is delayed by almost an hour and I sprint across terminals trying to catch my critical connecting flight – and I miss it.

    DSC_0366
Probably the best part about this stretch of my journey was this amazing soy hot chocolate from the Munich airport. It topped my European hot chocolate experiences quickly!

I stand in line for probably at least another hour before learning that there are no more flights out of Munich to Vancouver for another 24 hours. I had been so mentally prepared to go home that I almost cried on the spot – I had no more money to spend on hanging out in Europe and I didn’t want to get a free night in a hotel only to have to spend an entire day in the airport trying to kill time the next day while I waited for a flight. So, I met with a very kind German customer service fellow who offered me an alternative: Fly to Frankfurt, stay the night, fly to Vancouver the next morning.

    Alright!

  • Poland: Katowice

    Poland: Katowice

An incredibly stressful sprint to the airport took me from Brussels to Warsaw, where I stayed for the night before heading to my final major destination: Katowice!

    DSC_0363

I will admit to having lost my emotional composure multiple times between Brussels and Warsaw, and then again more intensely between Warsaw and Katowice – misinterpreting which airport I was to go to, trying to store large luggage overnight in different languages, avoiding having my phone casually stolen on the bus, and lacking decent sleep for weeks. It could have been a lot worse, but I was quite shaken by the time I arrived in Katowice. Thankfully, my cousin had given me directions to my first stop in the town: Veganka.

    DSC_0365

Full of traditional Polish food that has been veganized, a very kind employee translated every menu item for me and I found myself with a sour sausage soup and a vegan ice cream sandwich (VERY GOOD). My cousin met up with me, and we began a whirlwind tour of the area that would last for only a couple of days.

    Dublin, Malahide, Howth

There wasn’t a particular vision I had in mind when I made my way to Ireland, but I was blown away by its natural beauty when I arrived!

    … And funky bars.

I did not realize just how much I valued how the ocean feels until I was standing on a coastline again and seeing waves crash and hearing sea birds fly overhead. It was so refreshing to be outside and enjoying good company in such a lovely place.

  • Prague

    Prague

My time in Prague was far too short, and I wish I could have enjoyed more outside of Old Town. Nonetheless, it was a beautiful (and bustling) city that I am glad I saw in such beautiful weather! Its colours and cobblestones and castle were delightful (and my company, too).
