    Day 26: Pumpkin Quesadilla, HappyHealthyLife

    DSC_0729

This was one of my favourite new things that I tried for this year’s challenge.

I think I’ll be returning to Happy Healthy Life for more recipes in the future because this one was really unique and tasted great! Pumpkin, maple syrup, vegan (Daiya) mozzarella cheese, and I threw in some veggie chick’n for protein (these tortillas were also stacked with protein!). I highly recommend this for the various potential modifications and health benefits you can get from a twist on the traditional quesadilla!

    Day 16: Pumpkin Cheerios, Cheerios

    DSC_0616

My eyes LIT up when I saw these at the grocery store! They are made with real pumpkin and tasted like it, too! They definitely made a simple breakfast much spicier.

If you can find these in your grocery store, I would definitely recommend grabbing them! Before they’re gone.

    Day 6: Pumpkin Chocolate, Lindor

    DSC_0473

Arriving late off a flight, I was not sure what my pumpkin item would turn out to be, but I was pleasantly surprised to be presented with pumpkin chocolate spheres upon my arrival! I didn’t find the pumpkin spice flavour to be very prominent in the chocolate, but the mild flavour paired well with it nonetheless.

  • Hot Chocolate Festival VII: Stops 21-27, Farewell

Hot Chocolate Festival VII: Stops 21-27, Farewell

When it launched in 2011, The Vancouver Hot Chocolate Festival was the first city-wide festival of its kind in the world.  This January it returns for its 7th year, bigger and better than ever, with Vancouver’s best chocolatiers, pastry shops, bakeries, cafes, gelato and ice cream makers coming together to make the humble hot chocolate hotter than it has ever been before.

This Festival is a fundraiser for the Downtown Eastside women’s job training
program of the PHS Community Services Society and East Van Roasters.

Stop #21: Pretty in Pink, Bel Café

    dsc_0130

Always a lovely stop to find a seat at one of the daintily decorated tables in Bel!

The flavour for this half of the festival had no non-dairy option if I wanted the full experience, so I braced myself and dove into the rose-infused beverage first thing in the morning.

    Chocolate Snowball Cookies

These might not be your mama’s snowball cookies, but as a first-time baker of such a treat, I deem them a success (and so does C.C., who affectionately calls them “crack”).

    Dark Chocolate “Walnut” Cookies

    dsc_0773

A few substitutions later, and here were the results.

The recipe called for many oats, but I used flour, and it called for walnuts, but I used pecans. In the end, I believe I missed out on some fun texture but still had a delicious batch of cookies – simple and good.

    Vegan Eggnog Cookies

    eggnog2

I dropped the ball on what I hoped would be the best recipe of the whole bunch.

This recipe was so exciting to me! I love vegan eggnog. The batter was tasting pretty good, but I could feel it turning to glue as I tried to mix in some liquid – I think the biggest problem was in neglecting to mix the leavening agent at the right time, so the dough remained doughy even after baking.

I will try these again one day, though, because there is TOO MUCH potential to not give it another go!
