It has been a bit of a scramble these past two weeks, so I would like to apologize to no one in particular about my delayed pumpkin updates. I started a new job and sitting down to write about pumpkin after finding time to acquire pumpkin has proved surprisingly challenging! But, here we are: the third week of Pumpkin Challenge 2018.

It’s been a great October so far for many reasons, but many include pumpkin. It was especially nice to get to enjoy so many pumpkin items with my west coast comrades over the last week and a half and to indulge in Vancouver’s pumpkin offerings.

I’ve just returned to Toronto and am getting ready to dig into more of its seasonal goodies for my second October in the city! In the meantime, take a look at what I tasted over the last week below.

It’s the most, wonderful tiiiiiime….. of the yeeeeear!

Friends. It is that time of year where everything I bake and consume seems to be orange. This started in first year when a friend recommended we try to eat something pumpkin-y for the entire month of October. However, much like the rest of my life at that time, I had grand ideas and minimal training in focus and effortfulness. So, I had more pumpkin items than usual but would say I fell short of a truly fulfilled pumpkin challenge.

Nowadays, I take my month-long challenges quite seriously (especially if they include consuming delicious things). For the past eight years I have refined my skills in identifying and producing pumpkin items and have developed my skills in sitting down and making a plan to check off that box every day of the month.

I hope you enjoy consuming these goodies with your eyes as much as I enjoyed consuming them with my mouth.

Day 1: Pumpkin Cinnamon Rolls (Chocolate-Covered Katie)

    DSC_1526

I have made these three times, and this time was my second-most successful attempt! I forgot to let the rolls rise one more time before I popped them in the oven, but despite this slip-up, they still were consumed in their entirety.

    ****

Day 2: Keto-Friendly Pumpkin Muffins (The Low-Carb Diet)

    DSC_1530

In honour of a friend’s birthday, I tried my hand at a keto-friendly recipe to accommodate my friend’s current diet!

Head’s up: These muffins are not like your standard muffin, if your standard muffin is made of wheat or a gluten-free flour. These coconut-flour and almond meal-based muffins are gooey, rather than fluffy, but they are light and sweet and delicious!

Day 3: Pumpkin Spice Cake (Friend!)

    DSC_1551

My lovely friend knew on this day that I would be traveling and that my ability to acquire pumpkin goodness would be somewhat restricted. So, as a SURPRISE, she baked me a pumpkin spice cake!

This cake had two layers and had many fall flavours packed into each one.

Day 4: Pumpkin Pie Smoothie (The Juice Truck)

    DSC_1572

I’ll admit: I was on a mission to find something else on this particular day. However, when I realized that the item was sold out, I saw an opportunity to return to an item from a few Octobers ago – the Pumpkin Pie smoothie from The Juice Truck!

This smoothie is truly like drinking a pumpkin pie through a straw. If you have the opportunity to hit up a Juice Truck location (if any others besides this one sell it?) you must try this flavour! It was topped with housemade coconut whipped cream sprinkled with cinnamon and sweetened with maple syrup – yes, it was as good as it sounds.

Day 5: Pumpkin Tarts (Neverland Tea Salon)

    DSC_1587

    Oh boy.

Neverland Tea Salon is one of my favourite places to go when I am in Vancouver. In recent years they have been really focusing on foods that meet everyone’s dietary restrictions, so my pumpkin partner and I ordered a vegan pastry plate! (I thought it said “party plate” when I first saw it, and I would say it lived up to this hypothetical name.)

Our pumpkin item was contained in this pastry bundle: a tiny tart PACKED with pumpkin spicy goodness and topped with coconut whipped cream and chocolate curls! This, and the crème brûlée and truffle and cake, were all so yummy and tasted even better when sharing each tiny bite with a friend.

Day 6: Pumpkin Pie Ice Cream (Rain Or Shine Ice Cream)

    DSC_1614

Rain Or Shine has provided what is likely to be the best photographs of the month – I’ve peaked early!

MM had sent me a message announcing the arrival of vegan pumpkin pie ice cream at this Vancouver beauty of a shop, and I had just been able to book a flight to the west coast, so we were able to enjoy it together!

I cannot find the right words to describe how good this ice cream tasted.

It was super creamy and full of pumpkin spice, but it was the abundance and texture of the pumpkin pie chunks that really boggled my mind. They were chewy and pumpkin-y and there were so many of them! If you are in Vancouver (or nearby), you must try this.

Day 7: Pumpkin Pie (Chocolate-Covered Katie)

    DSC_1635

Ah, Thanksgiving dinner. With the fullness of bellies and smells of baking comes the eventual classic: the pumpkin pie dessert.

I was feeling flattered to be asked to make my family’s pumpkin pie this year. With crust provided by my grandma, I embarked on a pie-making journey with what seemed like too little time based on the recipe. It called for 5 hours of fridge time to set – 5 hours? That must be more than necessary.

    Wrong.

    DSC_1637

My pie only got to chill for about 1.5 – 2 hours and let me tell you, 3 more hours would have been very good. We ended up enjoying some pumpkin pudding! My grandma can attest to the pie needing extra fridge time, as she let an extra slice sit for a couple of hours and it ended up turning into the pie it was meant to be.

Nevertheless, I believe this was a success – I wouldn’t even mind making this as a pudding on purpose in the future!

Thanks for joining me on the first quarter of my pumpkin month! Keep checking back to see more orange deliciousness and follow me on Instagram and Facebook for daily updates.

  • #KTTeats: TO Veg Food Fest

    #KTTeats: TO Veg Food Fest

    #KTTeats documents my food-finding adventures.

    ****

I stuffed my face with vegan food yesterday from a multitude of vendors and it was glorious.

This past week I went to the Toronto Vegetarian Association’s Veg Food Fest. It was made all the more enjoyable to have a vegan-food obsessed friend along for the ride, in addition to one who likes eating food more generally and who will occasionally willingly consume vegan food.

We all came in hungry and it didn’t take long before we found our first dessert (above and to the right) from Tori’s Bakeshop: a dense but delicious Simpson’s-esque doughnut with beautiful sprinkles on it! I would encourage a close-up examination of the specimen. The dessert on the left was the bookend to our trip and features an amazing peach and berry crumble-type bar from Sweets from the Earth, a supplier of very excellent and not obviously vegan baked goods.

In our journey to finding something savoury and more nutritious, we found dessert #2, which was perhaps the moistest and flaky baklava I have ever had from Baklawa Queen. We also found some churros courtesy of Choco Churros – it was best that we didn’t get the fancy ones covered in flavours because we were about to be so full, but they looked so good. And yes, perhaps the photo of me eating that giant churro evokes an image of something else, but I do not care. It was great.

We finally found our savoury meal in Globally Local, a vegan fast food restaurant. We got their double-layered “Famous Burger,” which, I must say, is worthy of fame. While it slipped and slid through our hands, we devoured it. We also got BBQ chick’n wings with vegan ranch dipping sauce and it was a great, overly filling time.

I found so many places that I want to go back to and consume the products of. I didn’t get to have any ice cream and there were several vendors whose dairy-free tubs I wanted to dive into.

This was great. Would do again. Will recommend to friends.

I was lucky enough to try two social media-hyped vegan meals over the last couple of weeks and, let me tell you, THEY LIVED UP TO THE DRAMA.

You may have heard about A&W’s “Beyond Meat” Burger that was released on July 9th, and I knew that I was going to find myself there not long after. The vegan influencers in my social media feeds confirmed this with their feverish posts about the burger’s delicious and meat-like taste.

It also just-so-happened to be Free Root Beer Day. A true blessing if I’ve ever seen one.

A few weeks ago I ducked out of Kingston to visit Toronto for the weekend and had the opportunity to eat several delicious items. They are too good not to share, and I would encourage you (whether you eat meat or not) to indulge if you are in town!

It took a lot of questions and contemplation, but eventually, my meal began with the Carrot Colada – and it had a reusable straw! Beyond this deliciously sustainable feature of the drink, the taste was also great. And the colour! So orange!

    Did I mention I moved?

In case you missed the memo, I have moved twice in the last nine months.

The first move was to Toronto, and the second move was to Kingston.

While Toronto was meant to be a bit longer term, I decided recently to act on a long-standing thought in my head to pursue a business program at Queen’s University, so now I’m kicking it in Kingston for the summer.

    DSC_0072.JPG

I’ll keep the blog updated with regards to my program and other Kingston happenings, which so far have included vegan pizza, a wild wind storm, a historical tour and a skeleton park, and excellent company. All within walking distance!

I think I’m going to enjoy it here.

Maybe I’ll even come back for awhile in the future.

  • Visiting Ottawa

    Visiting Ottawa

I had some free time between shifts at work just before my mini winter vacation in December and decided to use it to go visit R.L. in Ottawa!

Obviously, we got to baking right away. I had brought some vegan baked goods with me but one cannot do with only one cookie for oneself – one must make a massive batch of vegan gingerbread cookies to meet one’s cookie needs.

    24 Days of Tea: 19 – 25

Last year, my mom and I shared DAVIDsTEA’s 24 Days of Tea journey together. This year, my mom is too far away to share the same tin each day with me, so I had to go it alone this time around!

    DSC_0399

Join me for a cup of tea?

    ****

Day 19: Organic The Spice Is Right
    Green tea

This was a nice, light, and flavourful green tea! The spice truly was right with chilli flakes added to the mix of cinnamon, orange peel, cloves, and other natural flavours. A bit of honey and I was good to go!

    ****

    Day 20: Carrot Cupcake
    Rooibos

I was pretty excited about this flavour as someone who is enthusiastic about real-deal carrot cake, PLUS it is a rooibos tea! While I did find it pleasant, I wasn’t blown away by the strength of the flavour. Some sweetener and milk made it a bit fuller, but maybe this tea is just naturally a milder one. It had nice cinnamon notes and apparently some liquorice, as well – it is also not 100% dairy-free, which is unfortunate!

    ****

    Day 21: Hot Chocolate
    Pu’erh tea

This tea was being heavily promoted in stores whenever I visited and was being recommended as a delicious tea latte option. I wish it was dairy-free because I would probably buy myself some for the future! Alas, I don’t go out of my way to purchase non-vegan options. The tea was delicious, though, despite its dairy inclusions; with black and pu-erh teas and cocoa nibs, chocolate chips, more chocolate curls, and few other flavours, this tea was as close to hot chocolate as you can probably get!

I would recommend Cocoa Boost as a dairy-free, DAVIDsTEA alternative for chocolatey goodness with some fuel, but I believe it has recently been retired – truly, a tragedy.

    ****

    Day 22: Candy Cane Crush
    Black tea

    I love mint!

And black tea, so I was pleased to see this DAVIDsTEA holiday favourite appear in my calendar!  While it, too, has dairy in the white chocolate that gives it some of its fun flavours, I still enjoyed the cup I had in the name of the calendar. It is a sweeter tea, as far as black ones go, with its chocolate and snowflake candies inside, and is flavoured with peppermint and vanilla to round it out! I’m a fan of it with milk and (even more) sweetener.

    ****

    Day 23: White Cranberry Bark
    Fruit infusion

This sounds pretty good, right? Right. It was. I expected this to be a black tea, but was pleasantly surprised to find it was a fruit infusion! It is full of fruits such as apple, papaya, cranberries (obviously), and has added aroma and taste from hibiscus blossoms and the chocolate added in (again, not free of dairy). Some simple sweetening was good for me!

    ****

    Day 24: Santa’s Secret
    Black tea

A perfect way to start the day! No dairy to be found here, either. As someone who does celebrate the Eve of Christmas with my family, this was a nice seasonal flavour (and a favourite of DAVIDsTEA) to enjoy the morning of. It is simple in its black tea with peppermint-y accents, and was enjoyed with just some stevia and almond milk! It also had fun little candy canes inside, visible pre-steep.

    ****

    Day 25: Hurray!

Thanks for another year of festivi-teas, DAVIDsTEA! The last goody was an ornament and a coupon for $5 my next purchase. Whoop!

    ****

If you didn’t notice already, I dropped the ball on my featured image for this article – I brought the last two boxes to the west coast for the holidays and forget them to complete the picture! However, you can still see a cute little winter scene created by flipping each pocket of the calendar around!

Thanks for reading some simple descriptions of yummy things – I hope you’ll do it again the next time I find something delicious to share!
